Grilled Chicken Skewers and Homemade Tzatziki
Ingredients
- 1.5 lb. of boneless, skinless chicken breasts, and cut into 2-inch pieces
- 1 Tbsp of olive oil, or avocado oil
- 1 tsp of dried oregano
- 1 tsp of dried thyme
- 1 tsp of cayenne
- fresh ground black pepper and sea salt to taste, about 1/4 teaspoon each.
For the Tzatziki dip:
- 1 cup of plain whole Greek yoghurt
- 1/2 cup of seeded, grated cucumber
- 3 Tbsps of chopped fresh dill
- 2 Tbsps of fresh lemon juice
- 3 fresh of garlic cloves, minced
- fresh ground black pepper to taste and sea salt to taste
Instructions
first, make your Tzatziki dip: in a bowl/jar combine all ingredients, taste test, adjust as desired, And refrigerate until ready to use.
And if using wooden skewers, make sure to allow them to begin soaking in water for at least 20 minutes, to prevent burning.
After that, preheat your grill to medium-high.
Then in a medium bowl, add your chicken pieces and sprinkle with oregano, cayenne, thyme, pepper and sea salt, and drizzle with oil, then toss and stir well to coat.
And thread 2 to 3 pieces of chicken onto each skewer, arrange them on the grill, and make sure to let some space in between each skewer.
And close the grill lid and cook for about 8 minutes until the chicken is cooked through, then flip them a couple of times during cooking time.
Then serve skewers with Tzatziki dip, lemon wedges, and then your favourite fresh chopped veggies. Enjoy!
