INGREDIENTS

  • Ground beef; I used 2 pounds.
  • 2 large chopped onions.
  • Minced garlic; You’ll need 3 cloves.
  • 2 Tsp.Of chilli powder.
  • 2 Tsp.Of cumin.
  • 1/2 Tsp.Of salt.
  • 1/2 Tsp.Of black pepper.
  • 2 cans.Of ranch beans.
  • Frozen mixed vegetables; I used a 15-ounces can.
  • 2 large cans. Of whole kernel corn – drained.
  • A large can. Of diced tomatoes – drained.
  • A medium Ro-tel can of 10 ounces.
  • 4 diced russet potatoes.
  • Beef broth; I used 4 cups.

INSTRUCTIONS

Brown the ground beef in a big saucepan or dutch oven (mine is 9.5 qt) over medium-high heat. Drain if you so want.


In a large bowl, combine the chopped onion, garlic, and spices. While stirring to incorporate the ingredients, begin to bring the onion to a soft state by cooking for 5 minutes.


Add in the chopped tomatoes, corn, and veggies along with the ranch beans and corn. To combine, give it a stir.


Put in some chopped potatoes, some Ro-tel, and some beef broth. To combine, give it a stir. Then bring to a boil, then lower the heat to maintain a simmer.


Simmer for twenty minutes, or until the potatoes have reached the softness you like.
