Last summer, my family and I made the decision to host a backyard barbecue. While we grilled up some delicious burgers and hot dogs, I was determined to create a side dish that would truly steal the spotlight. That's when I introduced these delectable Parmesan Baked Potatoes into the mix. As they emerged from the oven, a divine fragrance wafted through the air, causing an instant craving.

I couldn't resist indulging in one right away, and with the very first bite, I found myself transported to a realm of potato perfection. The crisp outer layer gave way to a lusciously creamy, melt-in-your-mouth interior, beautifully seasoned with garlic, herbs, and, of course, the star of the show – savory Parmesan cheese.

They became an instant sensation among all our barbecue guests, and now, whenever we plan an event, these potatoes unquestionably claim their spot at the forefront of our menu.

Parmesan Roasted Potato Ingredients

These delicious oven-baked baby red potatoes, soaked in butter, and favorite herb seasonings, and roasted right in the oven for a delicious Parmesan crust are amazing.

  • 4 to 5 medium red potatoes, diced
  • one teaspoon each of garlic powder and dill
  • Pepper and salt to taste
  • 2 tablespoons of mayo
  • 1/3 cup grated Parmesan cheese
  • one onion (chopped)Instructions:


Preheat your oven to 425°F (220°C).

Line a baking sheet with parchment paper or lightly grease it.

And in a large mixing bowl, combine the diced red potatoes, mayo, chopped onion, garlic powder, salt, pepper, and dill.

Then toss everything together until the potatoes, then onions are evenly coated with the seasonings then mayo.

Spread the potato mixture in a single layer on the prepared baking sheet.

Place the baking sheet in the preheated oven and bake for about 25 to 30 minutes or until the potatoes are tender and golden brown. You can check the doneness by inserting a fork into a potato piece. If it goes in easily, they are done.

Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese over the potatoes. Return the baking sheet to the oven and bake for an additional 3 to 5 minutes or until the cheese is melted and slightly golden.

Once the potatoes are done and the cheese has melted, remove the baking sheet from the oven. Let the potatoes cool for a few minutes before serving.

Serve the baked Parmesan potatoes as a side dish or a snack. They are delicious on their own or with your favorite dipping sauce.
