How To Make Pan-Fried Parmesan Chicken And Zucchini Recipe



These are the ingredients you'll need to make this recipe:

INGREDIENTS

  • 2 eggs of beaten
  • 8 Tablespoons of butter divided
  • 1 cup of freshly grated Parmesan cheese
  • 1 teaspoon of pepper
  • 4 chicken breasts boneless and thin (under an inch in thickness)
  • 1/2 cup of Italian Bread Crumbs or panko
  • 3 garlic cloves fresh  and minced
  • 1/4 cup of flour
  • 2 of med sized zucchini sliced semi-thin
  • 1 teaspoon of onion powder

INSTRUCTIONS

FOR THE CHICKEN BREADING:

Start by beating the eggs in a shallow dish, and set aside

And in another shallow dish combine the bread crumbs, pepper, parmesan cheese, onion powder then the flour then stir to fully combine, and set aside

Then melt 4 tablespoons of butter in a large hot skillet.

Next, dip each of the chicken pieces in the egg mixture, and coat in the breadcrumb mixture then place in the hot skillet with the melted butter.

And cook on each side for about 3 to 5 minutes, or until the outside is crispy then browned and the chicken is cooked completely throughout, and remove pan then set aside

After that, add 4 Tablespoons of butter to the skillet and saute the fresh garlic for about 1 to 2 minutes. And add the sliced zucchini to the skillet then saute until completely tender.

And add a sprinkle of pepper and salt 

Then add the chicken back to the skillet, and gently mix then heat for about 31 seconds

And sprinkle with parmesan cheese. ENJOY!
