To make this recipe Sausage and egg breakfast, you'll need the following ingredients:

Ingredients

  • 8 oz Breakfast Sausage
  • 1/2 cup of chopped fresh vegetables such as tomato, bell pepper, baby spinach, zucchini, or green onion.
  • 1/4 cup of shredded reduced-fat cheese such as Cheddar, Monterey Jack, or American.
  • 4 large eggs
  •  Pepper and Salt (optional)
  • Toppings (optional):
  • Dairy sour cream, salsa, ketchup, sriracha.

Instructions

First, prepare sausage. Start by removing the skillet from the heat; and let cool for 11 minutes, stirring occasionally. And evenly divide sausage and vegetables into 4 food-safe quart-size plastic bags. Then close securely and refrigerate for up to 4 days.

And for each serving, spray one 6 to 12-ounce microwave-safe mug or bowl with non-stick cooking spray. And add 1 egg and 1 tablespoon of water; then whisk with a fork. And stir in 1 bag of refrigerated sausage-vegetable mixture.

Microwave, uncovered, on HIGH for 33 seconds. Remove from oven; stir. Continue to microwave on HIGH for 33 to 59 seconds or until the egg is just set. Stir. Top with cheese. And let stand for 33 seconds or until the cheese is melted. Then season with salt and pepper, if desired. And serve with Toppings, if desired. Enjoy!
